As promised, here's my next favorite thing. I discovered Dubliner cheese totally by chance at the local grocery store. The deli department had free samples and I fell in love and bought some right then.
This cheese tastes like a combo of cheddar and Parmesan-sounds weird, but tastes great. It makes some very tasty grilled cheese sandwiches and quesadillas. My favorite way to use it is to cut it into little chunks and eat with crackers. Be sure to let it come up to room temperature to get the full flavor.
